Why We Started EggStra
About three years ago, we read The 5AM Club by Robin Sharma and were inspired by the idea of waking up early. At first, it felt like an impossible challenge, and it took a couple of years to truly embrace the 5AM routine. But once we did, it made our day more productive and fulfilling, especially with a great breakfast to kickstart the morning.
EggStra was born out of our desire to build a community of early risers who appreciate the power of starting their day with intention. By offering a delicious breakfast and unique coffees you won’t find anywhere else, we aim to make waking up early something to look forward to. Whether you're already part of The 5AM Club or just getting started, we’re here to fuel your mornings and help you make the most of your day.
The Menu Creation
Our goal is to craft a menu that blends classic, well-loved flavors with unique ingredients, creating something both familiar and innovative. By infusing traditional favorites with unexpected twists, we’ve designed a menu that stands out from other restaurant concepts while still delivering comfort and quality in every bite.

At EggStra, we take familiar favorites and elevate them with bold, creative twists. We know that our community loves a great beef patty and French toast, so we set out to create something truly unique—something you won’t find anywhere else.
Our signature dish features a juicy beef patty, a perfectly cooked over-medium egg, fresh arugula, melted American cheese, and our house-made spread, all sandwiched between two slices of crunchy French toast. This combination balances savory and sweet, crispy and tender, creating an unforgettable flavor experience in every bite.

What challenges did we face with the EggStra concept?
Bringing EggStra to life wasn’t an overnight success—it was a journey of trial, error, and invaluable teamwork. Developing the perfect menu took time, and along the way, we experimented with a variety of breads, from Brioche Loaf to Texas Toast and several different buns. Each option had its strengths, but none quite delivered the unique texture and flavor we envisioned.
Through continuous testing and feedback from our team, we eventually discovered the magic of French toast—but we didn’t stop there. We wanted something even more special, something that offered the perfect balance of crunch and fluff. After countless refinements, we finally perfected our Crunchy French Toast, a signature element that sets our menu apart and brings an exciting twist to classic breakfast favorites.
This journey wouldn’t have been possible without the support and dedication of our team and community. Every challenge we faced led us closer to creating something truly unique—an experience that we’re proud to share with all of you at EggStra.
